Pomace is mainly recommended for frying, due to its better behaviour and resistance to high temperatures, which allows economic savings after several fryings, because it does not penetrate the food, but only leaves it crunchy. It is also used in confectionery, due to its mild flavour, which gives sponginess to sponge cakes and other sweets.
